Rice with white pumpkin

makes 2 servings

- 1 white pumpkin

- 2 cloves of garlic

- 2 cups of Arborio rice

- ¼ cup of dry white wine

- 3 spoon of olive oil

- 3 sweet tomatoes

- salt and pepper

cut the pumpkin in two parts and peel away the skin until you see the white, than cut again each parth in two, following the lenght and remove the seeds, than than cut the pumpkin as you see in the pic, or in the way you like.

Cut tomatoes in two parts

- in a large saucepan put pumpkin, garlic and tomatoes with two spoon of olive oil, and cook over medium heat stirring often (pumkin needs 45 minutes to cook).

- after 30 minute the pumpkin is cooking, brown one clove of garlic in a pot with one spoon of olive oil

- when brown, remove the garlic and put the rice, stir for one minute, until all rice will be wet with oil, then add two cups of water and ¼ cup of white wine, stir it once than cover and continue to cook over low heat for approximately 15 minutes without stiring at all.

(the rice is ready when duplicete his volume and there's no more water).

- now season the pumpkin with salt and pepper, than add the rice and stir well.
